About the cut

Also known as the American Wagyu Porterhouse, the steak is taken from the rib primal of a beef animal with the bone-in. It's traditionally known as a butcher's cut because the butcher would reserve certain tasty cuts for himself, the Porterhouse being one of them. As it comes from the upper rib cage, the muscles are underused with more fat, promising tender and well marbled meat.

This Wagyu Porterhouse has a well marbling taste like no other and is the best porterhouse you can find around the world.

The Wagyu Porterhouse steak is an incredibly juicy and tender steak with a buttery, rich flavor from the marbling. The bone in Wagyu is highlighted the most with the reverse sear.

Around the bone, is the section of the animal naturally collecting more intramuscular fat, creating the beautiful white lines of fat and the fantastic marbling unique to the rib primal.

Heat the inside of the steak in an oven or smoker on low heat and then sear on high heat on a cast iron or grill for an immense crust and a tender, cool center.

Georgie is amazing with customer service. He knows his products. Explains every cut and how to cook it. The meat is expectacular. I can hardly order steaks at restaurants because of the grease, his are not greasy just buttery. Glad i can ride my bike to the new market. # ADELANTE LoMelos

Simply the most amazing steak ever! On my first bite my wife and I looked at each other and she said Wow! It was the first time in our life we had ever tried Wagyu beef and we just could not stop talking about how incredible the difference is! We thought Capital Grille was a great tasting steak which it is but Lomelo’s takes it to a whole different level! In addition the service is unparalleled as they treat each customer as family! What a treat in a mass market world today!
